Scientific Name: Cinnamomum ceylanicum.
Botany: The cinnamon tree known as canelo is an evergreen tree belonging to the Lauraceae family. It reaches a maximum height of 12 meters, its leaves are oval and lanceolate, they are bright red at first and then turn dark green. This tree comes from Madagascar, southwestern India and Sri Lanka (Ceylan).
Origin and History: Throughout history the cinnamon plant has been related to protection and prosperity, it was part of a mixture of oils used to protect itself during the plague in the 15th century and, traditionally, it is also associated with the ability to attract wealth. During the time of ancient Egypt, a rich person was considered to be one who had the luxury of possessing cinnamon. Its culinary use is very important in Chinese, Indian and oriental cuisine, in Ayurvedic medicine it has been used for several millennia.
